A new gourmet gem, ‘Dapl’ launches today in the heart of Brisbane’s CBD, celebrating the heart and soul of Australia’s diverse culinary heritage, through modern Australian cuisine and innovative libations alongside a thoughtfully-curated wine list.

With a luxe interior, inspired by leading designers Cottee Parker, Dapl leans on a naturalistic decor, evoking a sub-tropical ambience. A captivating feature wall is situated front and centre, boasting earthy tones and verdure patterns. Surrounding walls present foliage watermarks, including a bird of paradise, cycad and banana leaf, fan palm and palm tree, alluding to Mother Earth and collectively enhancing the immersive, upmarket oasis.

Positioned within the iconic location of Amora Hotel Brisbane, Dapl forms part of an extensive $30M transformation of the hotel, unveiled late last year, with its name taking inspiration from a Dapl of light. Its high ceilings and natural light, materials and textures, present a relaxed space where guests are invited to indulge in a dapper, modern Australian dining experience, celebrating diverse native flavours with a menu curated by Executive Chef, Jamie Renfrey, using native Australian ingredients.

Renfrey has spent over 10 years advancing his culinary ranks and is renowned for his innovative approach to creative cuisine and culinary art. His bold passion for infusing flavours is echoed through his unique ingredient pairings that exude Australian flare and native citations.

“I grew up experimenting in the back garden, growing various vegetables, such as heirloom tomatoes, which was my grandfather’s passion. Dapl’s menu celebrates that family spirit while intertwining innovative twists in a vibrant display of Australian cuisine, past and present. Dapl leans on more than 30 native ingredients sourced from the best local and seasonal produce to create refreshing creations of modern flavours,” says Renfrey.

Guests can opt for an à la carte menu or indulge in a two or three-course set menu with an additional option for a wine pairing, presenting the perfect, complete dining experience.

Dapl’s signature dishes include Peppermint Gum Lamb, presenting a tenderness that’s coupled with an instantly recognisable taste of fresh peppermint, parsnip and marsala wine. To follow, Jaffa Delice brings a decadent symphony of rich chocolate mousse, infused with orange liqueur, complemented by a sensory haven of eucalyptus honeycomb.

Its extensive beverage menu includes award-winning wines, cocktails, mocktails and a series of craft products from local suppliers. Botanical cocktails showcase Dapl’s naturalistic theme with Tropical Punch – tropical gin, triple sec, sugar syrup, prosecco, and seasonal tropical fruits and Citrus Sparkler – red citrus gin, limoncello, rosemary and tonic.

In a continuous nod to nature, Dapl has partnered with several local suppliers in the Brisbane region such as Five Founders Beef, renowned as Australia’s first carbon-neutral beef product.

Brisbane local 23rd Street Distillery is also among Dapl’s chosen partners, selected for their dedication to crafting award-winning spirits from Australian ingredients. From their tropical gin, invoking Queensland holiday vibes to their celebrated Hybrid Whisky, with each spirit bottle a canvas to the designs of Australian artists.

Revel Brewing Co’s handcrafted and award-winning locally brewed beers are set to become a focal point behind the bar at Dapl, with Brisbane’s brewing history in the flavour and personality of each beer. In particular, their Mango Mac kettle-sour beer pays tribute to the Queensland classic, the Mango & Macadamia Weis bar, utilising locally sourced mangoes and macadamias.

From start to finish, diners will be taken on a five-star, unparalleled culinary experience. Dapl’s team of service professionals, headed up by Sara Fagerlund, are trained in every detail of restaurant operations, including food and beverage tastings, to provide guests with a personalised and memorable dining experience.

The botanical-themed restaurant hones in on the finishing touches in an exceptional display of attention to detail. The simplicity of the Luzerne crockery with earthy tones echoes the naturalistic interior while highlighting the standalone eloquence each dish presents, both visually and in taste.
